Summer Chickpea Salad

Chick peas are a vegetarian delicacy. They are some of my favourite beans to put into chilis, salads, currys, soups or eating them on their own roasted as a snack. They are very easily incorporated into meals.  

Chick peas provide an excellent source of protein, fiber and healthy fats. Three things very essential to a vegetetarian diet for good digestive, and brain health. They also contain manganese, copper, phosphorous, iron and zinc. Some of the best minerals you can give your body. 

I find making these cute little salads are great for summer lunch. You can make them ahead of time and put your ingredients into a mason jar with a lime to squeeze for your dressing. They are simple, refreshing and nutritious.

Summer Chick Pea Salad

1 Garlic Scape, 

1 Can of Chick Peas drained

1/2 of a Red Onion

1 Red Pepper

1 Avocado

1 Lime or Lemon squeezed

1 Tomato

1/2 cup of Edamame Beans 

1/2 cup of Corn



1 Tsp of Chopped Cilantro 

Combine all your ingredients and let rest and cool for an hour. Serve with chips or some of your barbecued favourites.
