With all the berries in season and having a fridge packed of fresh jam, I figured it would be a good idea to have some peanut butter handy for all the upcoming picnics. My favourite peanut butter is smooth but still chunky, and sweet but salty. So it only made sense to make my own and make it with honey and only processing it until it was the perfect consistency.
The health benefits of nuts are wonderful, their fat content is nothing to shriek about. The fat is primarily all mono-saturated, the fats that are incredible for your heart. People who eat 1/4 cup of nuts a day reduce their risk of cardiovascular disease tenfold. There are also many other nutrients involved in peanuts. Vitamin E, Vitamin B’s, Copper, Manganese, Phosphorus, Molybendum (this is essential for the activity of multiple enzymes in our bodies, which help major groups of organs thrive. Also, it provides many antioxidants which protect against oxidizing in our cells.)
Pair this with my Chia Jam and I promise you won’t be disappointed, you and I are now picnic ready.
Honey Peanut Butter
1/4 cup of Peanut Oil (or any other oil)
1/4 cup of Honey
2 cups of Peanuts
Put all your ingredients through a food processor, until you get the texture you prefer. If you are looking for a smoother consistency, add a tbsp more of peanut oil and honey until you get your desired texture.
