Sweet Potato Toast is much more indulgent than it sounds. Despite sweet potato being mostly used in savoury dishes, you would be surprised by how well it tastes when its used in sweet dishes, I enjoy making mine with bold flavours like baked apples and walnuts (cut stem off the apple, put a tsp of butter where the stem was, sprinkle with brown sugar & cinnamon and bake at 350F for 30 minutes) or maybe a little pb&j and banana slices. There really are so many possibilities and combinations, its just understanding what you’re pallet can handle.
Savoury on the other hand is much more simple, there are endless of variations. My favourite is making myself a corn and bean salsa to put on my toast over some avocado slices, depending on my hunger levels i’ll even add a fried egg. This is a perfect combination and has such a great variety of nutrients. Another one of my favourites would have to be brie, sauteed mushrooms and chives. Once put under a broiler, the cheese gets ooey gooey delicious.
Sweet Potato Toast
Cut sweet potato a 1/4 to a 1/2 inch thick, and toast on the highest setting on your toaster. Check once done, you may have to do it another time depending on how crisp you would like your toast or how firm.
Top with all your favourites and enjoy!
