I grew up loving potatoes. I could eat them every meal, of every day. It wasn’t until a few years ago I decided to give sweet potatoes a try, and once again, one bite in and I was hooked. They are just too easy to eat, so easy to cook, so easy to bring to the table with confidence that those spuds are going to taste fuckin’ good.
Thats when I started to make my own fries, because regardless what the health guide tells you, having oven fries a few times a week is actually good for you. One potato depending on the size can be 1-2 full servings of vegetables, which if you asked most the population which food group it lacked on, I think fruits and vegetables would be the winner.
So get a little crazy, unbuckle your belts, sharpen your knives, and eat some french fries.
Cajun Sweet Potato Oven Fries
These are amazing, easy and way better than store bought.
Preheat your oven to 425F
Wash and trim two sweet potatoes. Slice your sweet potatoes length wise and then length wise again. About an inch square. Toss in olive oil, and my fav Cajun which is located below!! (I’m not knocking store bought but if you have all these in your cupboard save the 6$)
Cajun seasoning: 2 portions
2 tsp salt
2 tsp garlic powder
1 tsp onion powder
2 tsp paprika
1 tsp black pepper
1 tsp cayenne
1 ¼ tsp oregano
1 ¼ tsp dried thyme
Pour onto sheet pan and bake for 45 minutes, if they aren’t crispy enough cook an additional 10-15 minutes. Serve hot with guacamole for dipping.
